Chapathi Carne Asada


 carne asada literally means 'grilled meat'  & have used chicken as meat.
  • Ingredients
    • Chicken
    • Peper powdered
    • Lemon - 1
    • Olive oil - 5 tbsp
    • 1 Orange Juiced (Can also use pine apple juiced) 
    • 2 tbsp chopped coriander leaves
    • 2 tablespoons white vinegar (Optional)
    • 1 jalapeno, minced
    • 3 to 4 garlic minced
    • Mint chopped leaves
    • Jeera/cumin seeds -1 tsp
    • Hot Water
    • 1/4 tomato.
    • Salt for taste
    • lettuce
    • Chopped onion  - 1/4
    • Avacodas
  • Direction 
    •  Marinade
      • Orange - 1 (Squeeze to get juice)
      • Lemon - 1/2 Squeeze
      • 2 garlic cloves, minced
      • 1 jalapeno, minced
      • Olive oil - 2 tbsp
      • 1 tbsp chopped coriander leaves
      • Jeera/cumin seeds -1 tsp
      • Mint chopped leaves
      • Peper
      • Salt
      •  2 tablespoons white vinegar (Optional)
      • Mint chopped leaves  (Optional)
    • Pour the above Marinade mojo over chicken. Wrap tightly and refrigerate for 1 hour or up to 8 hours

    • In a mixing bowl, combine all below ingredients together for help during serving as Pico De Gallo (In Mexican cuisine, pico de gallo also called salsa , is a fresh, uncooked salad made from chopped tomato, onion, cilantro,  lime juice etc... ). Toss thoroughly.
      • 1/2 tomato
      • 1/4 Onion
      •  1/2 lemon squzzed
      • salt
      • peper
      • 1 tbsp chopped coriander leaves

    • Grill the chicken :-    With spring on the boston, I could not grill in public park due to rain. But also as an apartment dweller with no grill, the grill pan is the only viable left with.  Trying to Mimic Grilling with Pans so actually would lost some aesthetic. 






    • Final fill chapathi with salsa & serve with Avacoda. Lettuce, lemon

Upma


My today recipe was upma.

Upma

  • Ingredients
    • 1 cup semolina/sooji/rava (fine variety)
    • 1 tsp chana dal/split
    • 1 tsp urad dal/split
    • Chopped onion 1
    • Olive oil - 3 tbsp
    • Hot Water
    • 1 tomato.
    • Salt for taste
    • 4 to 5 karibevu
    • 3 green chilly, chopped
    • 3 to 4 garlic, 3 to 4 cloves, ginger grated
    • Jeera/cumin seeds -1 tsp
    • 2 tbsp chopped coriander leaves
    • 1 tsp mustard seeds 
    • Cut vegetables :- Beans, Carrot & potato  (Optional)
    • peas (Optional)
    • Turmeric Powder

  • Direction 
    • Ripe the skin of tomatoes by dipping into boiling water.
    • Dry roast sooji well in a kadai.

    • heat 2 to 3 tbsp oil in a pan & Add in all seasoning ingredients and let it sizzle in hot oil for less than a minute.
      • cumin seeds
      •  mustard seeds
      •  karibevu 
      • Channa Dal
      • Urad Dal
    • then add thinly sliced onions. a pinch of asafoetida/hing, green chilli, tomatoes
    • stir often and saute the onions till they start turning golden.
    • then add the Turmeric Powder, carrots, beans,potato,peas and fry it for 5 mins.

    • Now add in the rava and fry it with the veg mixture..
    • pour 2.5 cups water.
    • Add salt for taste.
    • Add termeric leaves
    • and keep mixing. The mix will get thick.

    • Now simmer the stove and cover with a tight lid and cook in a low flame for 15 mins. When the time is up, open the lid and fluff the upma.

Long squash sambar


My today break fast was  Dosa, Lunch & Dinner  Rice with Sambar.

Long squash sambar

  • Ingredients
    • Chopped onion 1/2
    • Olive oil - 3 tbsp
    • Hot Water
    • 1 tomato.
    • Salt for taste
    • 3 to 4 garlic,1 inch cinnamon, 3 to 4 cloves, ginger
    • Long Squash - 1/4 chopped
    • Toor dal - 1/4 cup
    • 3 red chilli
    • Jeera/cumin seeds -1 tsp
    •  asafoetida/hing
  • Direction 
    • Ripe the skin of tomatoes by dipping into boiling water
    • Grind  pilled tomato, garlic, Long Squash, sambar powder.



    • heat 2 to 3 tbsp oil in a pressure cooker and saute the cumin seeds, then add thinly sliced onions. a pinch of asafoetida/hing, mustard seeds, red chilli
    • stir often and saute the onions till they start turning golden.
    • then add the crushed paste from mixi
    • add the toor dal.
    • pour 4 cups water.
    • Add salt for taste.
    • Add termeric leaves
    • pressure cook on medium to high flame for 2 whistles. when the pressure settles down on its own, remove the lid. gently mix the sambar.

Bread omelet & methi-bath

My today break fast was  Bread omelet, Lunch & Dinner  methi-bath.

Bread omelet

  • Ingredients
    • Bread - 4 slices (Whole grain organic wheat bread)
    • Egg - 2
    • Salt to taste 
    • Pepper to taste
    • Coriander leaves
    • Green Chilli - 2
  • Direction 
    • Mix egg,salt,pepper,chilli & Coriander leaves. 
    • On the heated pan Place 4 slices of bread
    • Pour the  egg mix over the bread 
    • Flip over to cook

  • My ratings:-   Simple & Easy to make. Out of 5 I will rate 3. 

Methi Bath

  • Ingredients
    • Chopped onion 1/2
    • Olive oil - 3 tbsp
    • Hot Water
    • 1 tomato.
    • Salt for taste
    • Rice - 2 Cup (Generally basmathi rice is used But i prefer sona masori)
    • 3 to 4 garlic,1 inch cinnamon, 3 to 4 cloves, ginger
    • Methi leaves - 1 cup tightly packed
    • 3 green chilli
    • Jeera/cumin seeds -1 tsp
    • Fennel seeds/sombu -1 tsp

  • Direction 
    • Ripe the skin of tomatoes by dipping into boiling water

    • Rinse rice in water first very well. then soak the rice in enough water with termeric powder for 30 minutes. 
    • when the rice is soaking chop using mix all  methi leaves , ginger, garlic, chilies, cinnamon, cloves, tommota

    • heat 2 to 3 tbsp oil in a pressure cooker and saute the cumin seeds, then add thinly sliced onions. 

    • stir often and saute the onions till they start turning golden.
    • then add the crushed pastefrom mixi
    • add the soaked  rice.
    • pour 3 cups water.
    • Add salt for taste.
    • pressure cook on medium to high flame for 1 whistles. when the pressure settles down on its own, remove the lid. gently fluff the Bath.

Honey Bread, Chapathi & Spinach Curry

My today break fast was  Bread with honey, Chapathi with curry. Dinner with rice & curry.

Bread with honey

  • Our colleague Dean Harmon have hives & lucky to get fresh honey. 
  • Ingredients
    • Whole grain organic Whole wheat bread
    • Honey
  • Direction 
    • Just put your bread into the pan dry and let the heat toast the bread & make sure to flip the bread periodically. 
    • For toppings pour honey.

Chapathi

My friend kp (krishna prasad) is inspiration & master in this. He is perfect than machine & I am still 0% compared to him but effort continue to come to his level.
  • Ingredients
    • Wheat flour/atta - 1 cup
    • Olive oil - 1 tbsp
    • Hot Water
    • Curd (Optional)
    • Salt for taste
  • Direction 
    • Heat the water 
    • In a wide bowl or plate,measure the flour & take it.Add oil & salt to it.Mix it well so that curd & oil spreads well with atta. 
    • Now sprinkle hot water in large quantity & then adjust by adding more flour.  Try to make a soft,non-sticky dough. Note dough sticks lightly to your hand.  Also making dough with hot water is tough initially but worth for the effort to get smoothness. 
    • Now make cookie sized balls out of the dough as shown below

    • Take one ball, roll it without any cracks,pat it slightly & dust in the flour.Keep the remaining balls closed till use.Roll the ball into a uniform,thin circle. (I need to improve a lot here)

    • Heat a good conditioned non-stick pan & put the chapathi.Reduce the flame to medium.Keep rolling.U will see some bubbles appear on the top of chapathi.Immediately flip the chapathi.

Rice

Spinach Curry

  • Ingredients
    • Chopped onion 1/4
    • Olive oil - 3 tbsp
    • Hot Water
    • 2 garlic cloves, minced
    • 1 tablespoon curry powder
    • chopped spinach
    • 3 pepper & make it powdered.
    • 1 tomato.
    • Salt for taste
    • Turmeric-leaf

  • Direction 
    • Remove the skin of tomatoes by dipping into boiling water

    • In a nonstick skillet, cook the onion, garlic and curry powder in oil for 3-4 minutes or until onion is tender.
    • Stir in the squeezing tomato 

    • Add spinach
    • Sprinkle with salt, Turmeric-leaf  and pepper. Cook and stir mixture is heated through.

cereal Ras - Dosa - Rice

My today break fast was  cereal Ras, Lunch Dosa with curry. Dinner with rice & curry.

cereal Ras

  • Introduction
    • In Hindi ras meaning juice. This is breakfast made from roasted grain, eaten with milk hence cereal Ras.
  • Ingredients
    • Milk  (Wellsley Farms fat free Milk)
    • Kellogg's Special K Original Cereal
    • Whole grain organic Whole wheat bread
    • Old fashioned rolled oats. http://www.bobsredmill.com/organic-regular-rolled-oats.html
  • Direction 
    • Heat 1 cups milk in a saucepan. 
    • Add 5 to 6 spoon of Old fashioned rolled oats.
    • Cut Whole wheat bread & add into saucepan.
    • After boil Mix "Kellogg's Special K Original Cereal"

  • My ratings:-   Simple & Easy to make. Avoided sugar items as bread covered my sweetness. Out of 5 I will rate 2.5.  

Dosa

Rice

  • Bring 1 cups water to a boil in a medium saucepan. 
  • Reduce heat, Pour half cup rice,  cover, and cook until rice is tender and has absorbed all the liquid, 16 to 18 minutes (check only toward the end of cooking time).
  • Remove from heat and let steam, covered, for 10 minutes.


Curry was prepared by my inlaws before leaving. So don;t know the recipe details but was yummy.
